The Tater-Tot Omelet was a complete and total success! I started with your usual omelet fodder, and sweated some mushrooms, onions and peppers. Chopped up some thick sliced bacon, added the glorious tots and cheese and cooked to perfection. I doused that bad chicken in Tabasco and proceeded to crush it, and it was wonderful. I've documented the procedure for you below.

I have to admit, the mini tot is totally legit. I would eat it.
This looks frickin' fantastic. I think I have a project for the weekend. =)
I'm tellin ya, it' was rad. If I was to do it over again, I would use:
Mushrooms, Onions, green peppers, jalapenos, more bacon, more tots, more cheese.
